Pectin Solution

Pectin Solution

Sometimes strange procedures are recommended.

This is a pectin solution that is claimed to be quite effective. Spread a small amount thinly on a clean, grease-free slide, pick up from a waterbath and bake on as usual. Compare with amylopectin.

Presumably, commercial pectin solutions (Certo and others in the USA) used for making jams and jellies could also be used in a similar fashion, although a preservative may need to be added to them. Remember that starch-based materials may be oxidizable to aldehydes so that any staining method which demonstrates aldehydes will give background staining.
